Vineyards. This is how any brandy production starts. Here grapes are grown from which the wine material is subsequently obtained.

Depending on the variety of grapes containing 50 to 200 berries. Grapes is gathered by hand, carefully tearing the whole bunch as a whole, granting each berry warmth of their hands.

More than 30 varieties of grapes are grown up at the Tavria vineyards. The local climate  suits these vines, they can stand the piercing steppe winds and heat, but, unlike wine, cognacs require only white grape varieties.

On the whole area of vineyards of the  House of Vintage Cognacs "Tavria", covering more than 1,300 hectares of with drip irrigation system. Water from the tank is filtered and periodically fed to the vineyard to each bush.

After an experienced specialist determines the time for harvest, and the grapes are harvested by hand, they is separated from combs, crushed and prepared wine material - a must.

It is known that to produce cognac spirit need more wine material is required.
